Can I thaw Italian Sausage on my counter?

They'll be fine. Sausages are usually pretty salty, and there may even be some preservatives (not sure, Johnsonville is pretty decent about their ingredients, I think). Anyway two or three hours is not enough time for bacteria to multiply, especially since they were frozen to start, and covered while on the counter.
